Hyderabadi biryani is built kacchi — the raw, yogurt-marinated meat goes into the pot first and cooks from raw beneath partly-cooked rice, the whole thing sealed and slow-steamed in the dum pukht method. That single decision is what gives the dish its depth: the rice drinks in the meat's steam, the birista and mint work their way through every grain, and the saffron settles on top like the last word of the recipe.
How it differs — where the Lucknowi (Awadhi) kitchen layers meat that has already been cooked and keeps its spicing subtle, this is bolder and more robustly spiced — and it skips the golden potato and boiled egg that define the lighter, sweeter Kolkata biryani.

Plus at least 1 hour marinating the chicken.
Ingredients
- 750g basmati rice
- 1kg chicken, bone-in and skinless, cut into medium pieces
- 250g plain yogurt
- 3 tbsp ginger-garlic paste
- 2 tsp Kashmiri red chilli powder, plus more if your table likes it hotter
- 1 tsp turmeric
- 2 tsp garam masala
- Juice of 1 lemon
- 4 tbsp ghee, plus 3 tbsp neutral oil
- 3 large onions, thinly sliced, for the birista
- Whole spices: 2 bay leaves, 6 green cardamom, 2 black cardamom, 8 cloves, 1 cinnamon stick, 1 star anise, 1 tsp shahi jeera (black cumin)
- 4 green chillies, slit lengthwise
- 1 cup fresh mint leaves, chopped
- 1 cup fresh coriander leaves, chopped
- A generous pinch of saffron, soaked in 1/4 cup warm milk
- Salt
Method
- Rinse the basmati in several changes of water, then soak it in fresh water for 30 minutes while you prepare everything else.
- Make the birista: heat the ghee and oil in a wide pan and fry the sliced onions over medium heat, stirring often, until deep golden and crisp, 15-20 minutes. Lift out with a slotted spoon and drain on paper, keeping the fat in the pan.
- Marinate the raw chicken: combine the yogurt, ginger-garlic paste, chilli powder, turmeric, garam masala, lemon juice and salt, then fold in the chicken, half the birista, half the mint, half the coriander and the slit green chillies. Cover and rest for at least 1 hour — this is the kacchi marinade, and it does all of its work raw.
- Par-boil the rice: bring a large pot of well-salted water to the boil, add the whole spices and the drained rice, and cook for 5-7 minutes until the grains are about three-quarters done. Drain well.
- Assemble in a heavy pot: spoon a little of the reserved fat over the base, then spread the marinated raw chicken in an even layer. Pile the rice on top, scatter the remaining birista, mint and coriander, and pour the saffron milk over the surface.
- Seal the pot tightly — a strip of dough or a layer of foil under the lid keeps the steam in. Cook over high heat for 5 minutes, then drop to the lowest heat and leave to steam for 40-45 minutes; the meat cooks from raw in its own steam. Do not lift the lid.
- Rest off the heat for 10 minutes, then open gently and fold from the bottom to bring the layers together. Serve with raita or mirchi ka salan.
